May stick to the frying pan - better chance of timing it right. Be brave and 1 minute per side. ~ 1 inch thick steak. I like it bloody.

I think it's more medium - rare -> medium I like it - just at that point where the blood is being released and spills out when you cut it. Yum!
Ask for rare abroad and it's practically raw and, bizarrely, less bloody (coz I suppose the tissue holds the blood until a certain level of cooking).
Its not actually blood that comes out.
