To be honest, I very much doubt it needs much of a tip-off if its about tax. Simple back of a fag packet calculations and you can work out how much money these places take and then look at how much tax they pay - I'd imagine there is a massive delta! This stuff becomes a lot harder to hide as people use more and more plastic to pay and there is a record. As we become more and more cash-less, and there are records of every transaction in the Big Brother banking world, fraud and tax evasion mean its easier for bean-counters to prove.

To be fair the tip off would probably be less about them evading tax and more so about where they've hidden the money; it's very unlikely they'll have gone in in such numbers and started hacking away at walls unless they had some evidence from inside that it'd be a worthwhile job.

Say there's 130 nights a year then that's 1025 bottles a night. They sell probably twice as many bottles per night, probably more so 2 mill is pocket money for these guys!

The court blocks 16 properties of the owners of Amnesia
The ban on the sale or transfer affects homes and premises in Ibiza, Barcelona and Mallorca. It has also been seized money from the collection of the day and safety boxes

So aye, looks like someone who used to be inside the fold was pissed off and ratted them out.
 
If they were on the fiddle, they very likely had a sophisticated system for creaming a certain amount of surplus cash proceeds off the top every night, and if they did it would have to be laundered so as not to comprise part of the reported takings of the business to be of any use to anyone.

Tracing that next step is where the key to any prosecution is likely to lie and I am going to take a guess that this won't be easy. There would have to be some serious other players involved to clean up major amounts on a regular basis. Since few businesses have a 'real time' handle on their financial positions they still have a great deal of work to do if they want to use finding cash of that order of magnitude at a superclub's premises as conclusive evidence of tax fraud. It's a bit like finding large sums of cash at a casino lol.

Can't imagine the owners are going to relish having their passports seized and being on monthly bail reporting though !
