I'm not sure about out West, but in the East it's definitely a pork-based ritual. A good barbecue feast will include ribs and one more more of chops, sausage, and some chicken for good measure. Beef steak is not ruled out, however you'd have that straight-up off the grill without sauce.One of my sister's co-worker told me that normally east of the Mississippi BBQ includes pork ribs and pork chops and west of the Mississippi is beef based? Is that true?
