Salads

Very easy pasta salad:

Spaghetti (broken up)
Mayonnaise
Salted peanuts

Cook spaghetti and drain. Rinse through with cold water and shake to drain properly. Add mayonnaise and peanuts and stir well. Voila!

Chickpeas in garlic, oil, lemon,parsley. On a bed of Rocket, with slow roasted cherry tomatoes, olives and topped with griddled hullumi (sp)? yummy.
 
fresh spinach leaves, toasted nuts, toasted small pieces of bacon, goat cheese and a nice vinagreta (olive oil + modena + a little bit of honey)

greek salad - my favourite

cucumber, tomato, green pepper and onion chopped into cubes. Slices of feta on top, sprinkle with a few olives and drizzle with olive oil.

I like this one lots too, except for the green pepper.

Something that really shocks me it's the tendence of you brits to put strange dressings in every salad, dressings with a very strong savour so you can't notice the flavour of the salad itself. Nothing beats a good olive oil

how do you prepare chickpeas? Are the ones in cans ok or should you really buy dried ones and soak em for 8 hrs or whatever you're supposed to do?

Just the canned ones, I'm not domesticated enogh to soak my own. :lol: (give me a few years though):lol: :oops:

they're always soaking around my house cos my housemate is probably the oldest 23 year old in the world.

You then sqeeze a whole lemon, olive oil, crush a clove of garlic, parsley and a bot of tabasco over them and leave them for a while, whilst you do the tomatoes and hallumi.

Here endeth todays cookery class. :lol:
