Inspired from the lunch thread

I usually eat a salad every day, but I'm getting bored of leaves/cucumber/tomato/different dressing each week/chicken

What salads can you guys recommend? And what about salads you can prepare at home when you can be a little more complicated?

A salad I love to make at home is simply peri peri cooked chicken (hot) on green leaves (pref. watercress or similar) with ripe papaya pieces. Spicy chicken with papaya goes so well 8) . Usually put a bit of oil and lemon on the leaves too.
 
This is one of my fave ever salads - it's a bit of a faff to make, but you can keep it in the fridge:

Ingredients
350g/12oz penne, rigatoni or other similar shaped pasta
8-10 large sprigs of mint, leaves removed, and chopped/torn if large
150g/5oz frozen peas
200g/7oz feta cheese, crumbled
50g/2oz bag of rocket leaves
1 lemon, grated zest and juice
flaked sea salt and freshly ground black pepper
extra virgin olive oil
20-30 good-quality marinated green olives, pitted


Method
1. Cook the pasta in boiling salted water with 2 sprigs of the mint for the time given on the packet. 3 minutes before the end of the cooking time, add the peas. Once the pasta and peas are cooked, drain in a colander and shake under cold running water until cool. Discard the mint sprigs.
2. Transfer to a large bowl and add the feta cheese, rocket, remaining mint, the lemon zest and half the juice, salt and pepper and a good glug of olive oil. Either roughly chop or smash the olives in a pestle and mortar and add to the pasta. Toss well and add more lemon juice, seasoning or olive oil, if preferred.
3. Pack in suitable containers for taking on a picnic or serve warm as part of a main course or starter with a barbecue.
 
I love cooking!!

The other day I made:

Steak marinated in soy sauce and chilli oil with lime juice and a bit of honey

on a bed of...

Mixed lettuce
tomatoes
cucumber
peppers
radish
spring onion

For the dressing

olive oil
red onion
lime juice
sugar
(heat for about 3 mins)
 
Also a simple one and one that everyone has in the house:

Egg and Bacon salad

Boil eggs (baby quail eggs make the salad look cute)
fry bacon in garlic oil
make croutons in garlic oil

Lettuce and spring onion

with crusty warm bread mmmm


I have loads more, but I won't bore you
 
Beetroot's fab - roast it in tin foil with loads of rock salt, some olive oil and balsamic vinegar. Bit worrying when you "get rid of it" the next day though 8O
 
I'd love to be able to give some fancy recipes, but my salads only consist of lettuce, tomatoes, cucumber and chicken too :lol:

What are peoples opinions on beetroot? I think it tastes a bit like mud :?

It tastes better picked in white wine vinegar and sugar. My Gran use to cook it when I was little and it use to smell!!!! I love it pickled!

bean sproats are nice in salads too

:lol: :lol: We're a bit rubbish aren't we??? I feel a bit shamed by people like sirens :lol:


Please sirens give us some more recipes though, they're not boring, I'm going to try a few of yours out 8)
 
rocket/vine tomatos/carrot/grilled chicken stuffed with basil

add walnuts, croutons for extra crunch.

it's an achievement for me to even be eating a salad, I used to HATE all fruit and veg!!
 
Caesar Salad:

Grilled chicken
A strong hard cheese
Croutons
Mixed Lettuce
Homemade caesar dressing

1 cup mayonnaise
1 tbsp lemon juice
1 tsp Worcestershire
1 clove of garlic (minced)
1/4 tsp salt
1/8 tsp pepper
1/2 c Parmesean cheese or strong cheese
1 tbsp of milk or half and half
 
bbc food online, click on salads, there are loads of recipes on there. Waitrose and Deliaonline have loads also :)
 
of course beetroot tastes of mud. its a root vegetable.

i love it although bella's comment is very true. it can be an awful worry if you forget yourve had it for your tea when you go to the toilet the next day and think there is blood in yer urine.

alfafa sprouts make for good salad.

*smug* i grow my own rocket and herbs, nasturtians (eat the flowers, they are great)

dont forget the salad cream!!!!!!!!!
