“This is the most local dish I’ve ever made,” says our head chef Lee Milne of this sculpture-esque tomato salad. Five types of colorful Ibiza tomatoes from our local farm are cut, carved, sliced and layered, then topped with island-made Mozzarella, House of Herbs basil and drizzled in house-smoked balsamic. Even the flowers on top are edible and grown right next door to Pikes!

Pikes Up Your Life!
Over the years, we’ve learned that many of our guests go home inspired after staying with us, often recreating little Pikes-inspired corners within their own homes. We also started noticing that anything that wasn’t nailed down seemed to go missing – which in one way was flattering (after all, people really loved our style) and in another, frustrating (we love our décor too). With this in mind, the Rockett St George collection was born.
Turned up at 01:05, ten people ahead of us in the "queue", waited for 15mins, nobody left during that time and more had arrived, pushing to the front so we jumped back in the car and went for a cocktail at Buddha. 2/5
For me, Cosmic Pineapple is the closest you will get to that original Ibiza vibe. Hats off to the team behind this, just a magical experience all day and night. Hopefully another CP for the 5th September 2019!
