hi sandi!:p ;)

I had a fish finger sandwich for tea last week. Is that close enough?? (it had ketchup on it which is sort of an exotic spice based garnishing)

Turkey and pepperjack on whole grain bread, with lettuce and a dollup of mayo, banana, and an apple.

Hola Juana:

Here is one of my specialties. Enjoy.

Laguna’s Chichi Galore

  • 0.5lb or 250g of solid boneless/skinless chicken breast
  • 2-slices of Jewish Rye bread
  • 2-Slices of low fat Swiss cheese, Deli style
  • A pinch of salt
  • A pinch of coarse ground pepper
  • Enough olive oil to brush both sides of chicken breast
  • Romaine Lettuce leaves and thinly sliced tomato
  • A full sour pickle and a half-sour pickle
  • A few slices (thin) of tomato
Coat chicken breast with olive oil and sprinkle it with salt and pepper.
Broil it for about 20-23 minutes in your toaster/oven.
Use one slice of Swiss cheese to cover chicken breast for as long as the cheese just melts. Normally it is no more than 90s.
Toast bread to a light toast with half slice of cheese on each side
On the slice of bread that is on the bottom, place a lettuce leaf then slices of tomato to just cover the perimeter of the bread.
Place chicken breast on top of tomato slices followed by some more slices of tomato to just cover the perimeter of the bread.
Use another piece of lettuce leaf to cover the breast, followed by the slice of bread.
Slice diagonally if you care a rinky-dink about presentation.
Place pickles on the side and viola you have my Chichi Galore.
You can have a side of salad or maybe some Tabasco (to spice up things).

About 60g of protein, 9g fat (4 saturated), 28 carbs.
