It varies thru the season, last week when we were there the sunset about 9pm, as the days get shorter, the sun sets earlier so by September it's about 7.30pm.
There's loads of nice shops in Ibiza Town, spend an evening wandering round and you'll be be able to pick up lots of nice stuff.

I've found that you seem to be more likely to get a cloudy sunset in September but it's always luck of the draw, I have seen some gorgeous sunsets in Sept but there do tend to be more cloudy ones.

In July and August you risk to get "calitxa" a kind of mist provoked by the hot weather
