Alot of construction work goes on over the winter period, you could possibly get work as a labourer or other proffesion in that field. That is what allot of people seem to do.
Most places shut down for the winter though and those that don't are run by the owners on the odd night (like the Queen Vic http://www.ibizaqueenvictoria.com) and the islands population probably more than halves (not counting tourists).

Winter Work
If the intended GB Airways direct air service from Gatwick goes ahead this November it could mean the start of a winter tourist season, obviously nothing to rival that enjoyed by Majorca or the Canaries, but if the service is sustainable, then it may encourage some of the tour operators to open a Winter season, if perhaps at least it may encourage them to extend the season by starting earlier than May. Only Airtours currently start their holiday season in April for the Easter break.
