MIKALA in las salinas has announced they'll stay open this winter, thursday to sunday.

they usually have DJs playing in the evening, so always worth a shot. villalobos, apollonia and lots of island residents have played there this summer

alma beach in port d'es torrent (this year's new kid on the block) stays open throughout winter. not sure if they do any events, but certainly an option for a nice winter lunch on the beach
