What's open in Ibiza Town - late May

I'm thinking of going for the weekend at the end of May and would be staying in Ibiza Town. Are most the bars and restaurants open by then?

In Eivissa the bars don't close as the are used by locals, but the tourist bars around the harbour (if they close) open in April, and by May the place is in full swing (as is St Antonio)
