Depends where your thinking of eating mate.. its advisable to book a week in advance for places like KM5.. We ate at Amante last year and booked a month in advance and they had already taken a lot of bookings, we also couldn't get a table at la brasa in ibiza town but in fairness it was a saturday evening so give yourself a week or so to be on the safe side..
