Odd question- What do you think is the most tender muscle of a human?

Surprisingly there is little information on the matter. What do you think is the human version of the fillet steak?

It's a difficult question! The fillet muscle (psoas major) in cows (and all quadrupeds) is the most tender because it is used the least as I am sure you all know. However, because we stand up straight it is used all the time so I imagine it would be tough. So back to the original question which muscle is the most tender?
