Usually in Europe luxury cars have a higher minimum rental age than US, partly owing to the very high 3rd party liability risk young drivers carry statistically but also the comprehensive insurance risk on group policy.
Money does talk and certainly if you're able/willing to front the full replacement cost of the car as a cash bond I'm pretty sure you'll be able to rent one no problem as this removes the loss risk from the lessor. However you'll definitely need specialist short term insurance cover for the 3rd party liability element to facilitate the hire. Best thing is probably to use a VIP concierge service to arrange it for you with a niche hire firm and establish insurance terms. With prepayment and enough notice most things are possible in Ibiza. It's not something you'll likely find many people on here doing at your age so if you want to 'play at big boys' best thing is to hire in the services they do.
