Hey Woodruffe!
It sounds like you might not like lamb. Have you eaten this dish? Did you feel there was too much garlic? I didn't have that experience. I suppose it had garlic in it but it wasn't particularly noticeable.
So what else is in this recipe??? some kind of tomato... some kind of onion???

It could be Cordero en salsa. You can find recipes for it on the net but it's made in quite a few different ways. There's one version that has mustard, peppercorns, white wine and potato in it and I can't find a recipe for it anywhere.
The quail in quince sauce at La Brasa is something else. I'm sad to say it's a year next week since I was there last.

I am still quite interested in this recipe if anyone has anything more to add. I've prepared lamb shoulder quite a few timed now, but never as good as La Brasa!
