Ibiza Herbs

I have a bottle of Frigola at home that gets opened on rare occasion. It's quite good, although it lives in the shadow of the Hierbas.
 
There is aniseed or anise all over the island. You have to watch out with that Hierbas that stuff gives you a very different hangover. I think it might have to do with the herbs or maybe all the sugar.
 
it's actually fennel which grows in ibiza and it does of course have a similar flavour to aniseed. you'll also find sea fennel growing in abundance on rocky sea shores (it's called samphire in english) which is pickled and served as an accompaniment to dishes.
