Help for 3 nights dinner places early May, Sun - Tues?

Hi - can anyone give me some advice please? We are 3 girls (in our late 30's), I know the island well as my sister lives in San Jose, but have never been over this early before. We are staying in San Jose area. Need recommendations for Sun/Mon/Tues eve for dinner and if its possible that early in the week - a great atmosphere? We are only there for those 3 nights. I was thinking Blue Marlin for Sunday, then El Ayoun Mon and KM-5 or Bambudha Grove for Tues? Will everything be dead on a Monday that early in the season? Maybe we would be better going to Ibiza Old Town on a Monday night, and not to anywhere so isolated? Also are places like Sa Trinxa open for lunch? Thanks for any help!
 
I would look out on the forums for any special events, there's bound to be some... if I hear of any I'll try remember to post. I would have thought Sa Trinxa will be open, another favourite of mine is Es Collera at Es Cavellet... simply beautiful and the food is gorgeous I have had many a lovely girlie lunch there. Am sure you'll have fun where ever.
 
How about Banyan Palace if you're into Thai?
