Evening activities other than the clubs?

I have 8 nights booked at the end of july and although I will be out partying some nights, id like to have some other things planned for the evenings. My girlfriend and I are staying just outside of ibiza town so have easy access to the port area.
 
hit the bars - wander around ibiza town and dalt villa at night - wonderful!

go to the casino maybe?

have some nice dinners?

check out the open air cinema at amante? (only a few dates)
 
Any restaurants anyone can recommend? Im usually one to either pick the one that looks most convenient, or to stick with one night after night if I find somewhere nice. Would be good to have a few options in mind.
