Ibiza is great off-season, but quiet, so if you expect a bit of action I think only Pacha is open.
About hotels I know lots of them are closed but probably you could get good deal, like in other restorts off-season
You can rent yourself an appt for aroud 500 euros per month up to the end of april. Easy jet to barcalona or majorca are the best bet with cheap iberia flights or a ferry over.
when the sun shines its great around 18 degrees, well nice enough to sit at a cafe in short sleaves. but a bit chillyin the evening.
