Couple of new dishes

Continuing the health theme, we've rustled up a couple of new delicious dishes recently ....

1) Half a butternut squash (cut down the length) with seeds hollowed out, baked in oven with spinach bed, topped with mozarella, alongside tuna steak and avacado/pepper salad.

2) Sweet potato baked in oven (then throw or eat skin), mash up with a good quality tin of salmon, philadelphia cheese and tomatoes. Put back in oven for 5 minutes. Add side salad or vegetable stir-fry.

Delicious and 100% healthy!

I just cant get away with sweet pot or Squash...... makes me retch....... the rest of it sounds divine tho!!!:lol:
 
thanks for those drew, they sound really good!

if you ever get lazy or in a hurry, i've found that you can actually microwave a potato or sweet potato if you're just after getting it soft enough to mash. saves loads of time and you really can't taste the difference!
