Hey there.
You don't need your ID at all. As long as you look over 16 you'll be able to enter and drink in any bar or club in Ibiza. The drinking age in Europe is 18, and it's not enforced as strictly as in the States.
The only time an ID might be necessary is if you've bought pre-sale tickets for the clubs (like through Ibiza Spotlight) and are picking them up at the door. For that, your US drivers license works just fine.
